Healthy Superbowl Recipes

Superbowl and Superbowl snacks are almost here – this Sunday. You may or may not be a football fan, but we all need to eat and I hope enjoy eating. I’ve created some healthful Superbowl oriented dishes and snacks. Hope you enjoy them!
 

Buffalo Cauliflower Bites
These were delish and quite spicy. The family was impressed! I enjoyed them with avocado to cool the heat.
 
Ingredients:

  • 1 cup water

  • ¾ cup gluten-free flour

  • 1 teaspoon garlic powder

  • 1/8 teaspoon Himalayan sea salt

  • ¼ teaspoon ground black pepper

  • 2 pounds cauliflower, cut into 1-2” size pieces

Sauce:

  • 2 tablespoons avocado oil

  • ¼ cup Cholula hot sauce*

  • ¼ cup vinegar-based hot sauce* (I used Tabasco; could also use Frank’s or other)

  • 1 teaspoon garlic powder

  • 1 teaspoon honey

*If you prefer a more mild tasting cauliflower, reduce the hot sauce to 3 tablespoons each.

Directions:

  1. Mix water, flour, and garlic together and coat cauliflower pieces. 

  2. Place in pre-heated air fryer at 450°F for 10-12 minutes. 

  3. In the meantime, make the buffalo sauce. 

  4. Coat the cauliflower with buffalo sauce and place in air fryer at 450°F for another 10-12 minutes.


 

Kale Chips
These ‘chips’ are delicious and healthy. If you’re unsure or even think you don’t like kale, you have to try these kale chips. Seriously. You can eat a pound all by yourself!
 
Ingredients:

  • 1 bunch Tuscan or Lacinato kale

  • Spritz of avocado oil

  • Pinch of Himalayan sea salt

 
Directions:

  1. De-rib the kale. I find the easiest way to do this is to pinch the top of the rib of the kale leaf and strip your fingers down the rib pulling the leaf away from the rib.

  2. Loosely tear the kale leaves.

  3. Place in the air fryer and spritz with avocado oil and salt and stir.

  4. Air fry for 5-7 minutes at 390°F. Check every few minutes and remove the crunchy kale pieces until all are crunchy.

Sweet Potato Turkey Chili

What’s a Superbowl without chili? This is a colorful chili rich in protein, fiber, and lots of flavor. I added cocoa powder and cinnamon to add a different flare, we enjoyed it at our house. If you prefer a vegetarian chili, you could omit the turkey and add more beans.
 
Ingredients:

  • 1 large onion, chopped

  • 3 garlic cloves, minced

  • 1.5 pounds organic ground turkey

  • 2 sweet potatoes

  • 1 medium bell pepper - I used yellow for color to add to the orange sweet potatoes and red tomatoes

  • 1 14.5 ounce can organic diced tomatoes

  • 2 15 ounce cans organic black beans, rinsed

  • 2 cups vegetable or bone broth

  • 1.5 tbsp ancho chili powder

  • 2 tsp cumin

  • 1 tsp cinnamon

  • 1 tablespoon cocoa powder

  • 1/2 tsp black pepper

  • 1/4 teaspoon Himalayan sea salt


Directions:

  1. Brown the onions and garlic for 2 or so minutes.

  2. Add the turkey, stir, and cook until browned.

  3. Add the rest of the ingredients and bring to a boil.

  4. Once boils, reduce to simmer and cook for 20-30 minutes.

 
Tofu Basil Dip

I developed this recipe decades back in graduate school with a goal of creating a delicious high-protein, dairy free sauce/dip/salad dressing. This versatile recipe can be served in many ways, I hope you too enjoy it! For Superbowl, this could be a great dip with vegetables.

Ingredients:

  • 1 package (12.3-ounce) silken tofu

  • 1⁄2 cup water

  • 3⁄4 cup fresh basil, chopped

  • 1/4 cup nutritional yeast

  • 3 tablespoons gluten-free tamari 

  • 1 tablespoon lemon juice

  • 2 cloves garlic, minced

  • 3⁄4 teaspoon black pepper


Directions:

  1. Blend all ingredients together in a blender or food processor. May be served as a dip, over vegetables or whole grain, or thin it with more water to use as a salad dressing. Enjoy!

Pickled Jalapeños

We like spice here in our household. I’ve been making these jalapenos the past year and keeping them in the fridge to add to various dishes. Recipe from Gimme Delicious.
 

Ingredients:

  • 6 jalapeños, thinly sliced

  • 1 cup white vinegar

  • 1 cup water

  • 2 cloves garlic, minced

  • 1 tablespoon Himalayan sea salt

  • 1 ½ tablespoons sugar

  • ¼ teaspoon Mexican oregano

 
Directions:

  1. Combine the vinegar, water, garlic, sugar, and salt in a medium pot and bring to a boil. Add jalapeño slices, stir, and remove from heat.

  2. Let sit for at least 8 minutes then use tongs to remove the jalapeños from the pot to a jar; cover with the brining liquid to fill the jar.

  3. Store in the fridge for up to two months.


Furikake Popcorn
Popcorn is a great crunchy Superbowl snack – a win over typical chips from a nutrition perspective. I’m regularly seeking ways to incorporate more seaweed into the diet; I thought this Furikake popcorn was an innovative way to achieve that. One caveat; my fingers were coated with seaweed.
 
Ingredients:

  • ½ tablespoon avocado oil

  • ¼ cup unpopped popcorn

  • 5 gm/1 piece nori sheet

  • 1 teaspoon sesame seeds

  • 1/8 teaspoon Himalayan sea salt

 
Directions:

  1. Slice and chop the nori or blend in the blender.

  2. Place oil in pan and then add the popcorn. Shake/turn continuously until the popcorn is all popped.

  3. Top with nori, sesame, and salt.

Whether you're rooting for the Patriots or the Seahawks, Superbowl is happening this weekend. Hope these recipes help to properly fuel you for the fun.
